Notes on the execution:
- If using a thin-skinned grapefruit and can't get enough zest, you can make up the difference in grapefruit juice. This gives a milder flavor then the zest - the amount of liquid is small enough not to have caused an appreciable difference in texture, but SOME zest should be present.
- I left the glaze out (mostly because I was also cooking dinner at the same time and was out of burners!) so may have been a little less sweet than the recipe calls for - this is fine.
- I used 4 large eggs as recipe calls for 3 extra large eggs, as well as coarse sea salt instead of kosher salt. These substitutions didn't seem to cause a major problem.
- Yes, you can eat this for breakfast :-)
